STUFFED GREEN PEPPERS

I always looking to try new recipes and incorporating veggies in them as much as I can.
This recipes I love, you could use ground beef meat mix with mushroom or mushroom by itself it works well, and it does not change the taste at all so its for the meat and veggie lovers out there.

What you need
Green Peppers (one per person)
2 cups of Cook White Rice (three if you serving 5 or more
or substitute with orzo pasta or couscous)
1 Can of Mushroom ( if making only veggie version use fresh slice mushroom chopped well)
Ground beef or  (substitute with ground chicken, turkey
or for veggie lover Fresh White Mushroom)
1 Can 28 ounce of Dice Tomatoes
1 Teaspoon of Oregano
1 Teaspoon of Italian seasoning
5 Tablespoon Worcestershire Sauce
1 Egg
1/4 cup Parmesan Cheese
1 medium Onion Dice
1 Teaspoon Chopped Garlic
Salt and Pepper To Taste
1/4 Cup Shredded Mozzarella Cheese To Sprinkle On Top
1 Baking Dish

Preheat your oven at 350 degree
In a large pot of boiling water place pepper
boil for 2-3 minutes or until
Al Dente remove with a slotted spoon.

Dice Onion

Chopped The Can Of Mushroom Or Fresh
Season the ground beef meat
with salt and pepper
Sautéed onions and garlic
cook the ground beef meat until brown
*If making veggie version only mushroom same method goes with the
exception you cook the mushroom until soft*.
Add can of chopped mushroom
1 can 28 ounce of dice tomatoes with liquid
*set aside a 1/3 cup of dice tomatoes to pour on top of peppers*
1 teaspoon of oregano and Italian seasoning
Simmer for 5 minutes
Set aside to cool
Look like this

Meanwhile place white cook rice in a bowl add
1 egg 5 tablespoon of Worcestershire sauce
Dice if any left over of green pepper covers
add to rice mix well
salt and pepper to taste.
Looks like this
Add to the rice the meat mixture
or Mushroom mixture
Mix well
like this
Add a 1/4 cup of Parmesan Cheese
this part its optional
look like this

After adding all the ingredients this is how
it look
In a  prepare with non stick spray baking dish
add some rice mixture
to be your anchor for the peppers,
Take a pepper and fill with mixture
 to the top.
Like this
Now Sprinkle with mozzarella cheese
you could add as much as you want
also optional.

Add 1 tablespoon of dice tomatoes on top
like this

Place Stuffed peppers into a preheated oven of 350 degrees
and cook for 25 minutes. or until the peppers
are tender and the filling is heated.
Important note some oven vary
cook for additional 5 minutes

My mother's Italian recipe is very similar. You have to make sure that the boil the peppers long enough so they soften up and aren't too hard.
