We adapted The Spanish tradition
cold tomatoes soup recipe
also known as gazpacho soup.
It is a summer soup with fresh vegetables
and some acidic, like vinegar
or lemon it takes 20 minutes to make
and it is a refreshing soup.
Their is so many variation of gazpacho soup.
This is why is so good to make, you could also
modified to your liking and see what
you come up with.
This is my version of gazpacho soup.
VEGGIE GAZPACHO SOUP!
1 (28 ounce) Whole Peeled Tomatoes or 4 Fresh Garden Tomatoes
1 Medium Onion Dice
1/2 Cucumber (Peel and dice)
1 Red Pepper
1 Green Pepper
1 Orange Pepper
1 Tablespoon of mince garlic
1/4 cup of Fresh Parsley
1/4 Cup of Water
2 Tablespoon of lime or Lemon
2 Tablespoon of Distilled Vinegar
Salt and Pepper to taste
1 can of 28 ounce Whole Peeled Tomatoes or Fresh 4 Garden Tomatoes Dice
1 MEDIUM ONION DICE
1/2 CUCUMBER PEEL AND DICE
1 ORANGE, RED AND GREEN PEPPER DICE
1/4 CUP OF PARSLEY
1 TABLESPOON OF GARLIC MINCED
1/4 CUP OF WATER
2 TABLESPOON OF LIME JUICE (Organic optional)
2 TABLESPOON OF DISTILLED VINEGAR
PLACE ALL INGREDIENTS FOOD PROCESSOR OR BLENDER
BLEND UNTIL WELL COMBINE SLIGHTLY CHUNKY
IT WILL LOOK LIKE THIS
STORED IN THE REFRIGERATOR FOR 2 HOURS
THE LONGER IT STAY THE BETTER THE FLAVOR

GARNISH WITH PARSLEY
SLICE OF LEMON WITH A PINCH OF FRENCH FLEUR DE SEL (SALT)
LAST IDEA GARNISH WITH
ALWAYS BEAUTIFY YOUR PLATES!
GOOD TO KNOW:
This recipe serve 9 to 10.
It last if stored in refrigerator 3-4 days.
If chunky do not freeze it make veggies soggy.
If blended smooth it will do find in the freezer.
Could be serve as a meal or as shown above appetizer.
