YELLOW SQUASH SAUCE

We have to admit there is so many red sauces
recipes we like. 
In some cases we do crave
to try something 
different with
a red sauce.
In my case I had a yellow squash
on my left hand and 
a can of dice tomatoes on my right hand.
I could not think of anything better
than combine these two
so I came up with 
YELLOW SQUASH SAUCE
 Hope you give it a try
and make it with any
pasta trust me is delicious.

INGREDIENTS

6 Tablespoon of a good Olive Oil
1 Small White Onion Dice
1/4 cup of  Roasted Red Pepper
1/4 cup Sun Dried Tomatoes halve
1 garlic minced (if jar 1 tablespoon)
1 Teaspoon of Capers
3 Tablespoon Tomato Paste
1 Can 28 ounce of Dice Tomatoes
Pinch of Red Crush Pepper (optional) if you like it spicy
1/4 cup of Red Wine ( something you will drink)
1 Teaspoon of Dry Oregano
4-5 Basil leafs
1 Yellow Squash Slice
Salt and Pepper to taste



DIRECTION
In a sauce pot add
6 tablespoons of good olive oil
add dice onion
and garlic, pinch of red crush pepper
 sauteed and stir for 1 min.
Add sun dried tomatoes, caper,
roasted red pepper, dry oregano,
2 tablespoon of tomatoes paste
stir until tomatoes paste until it melt away
into a sauce than
add 1/4 cup of wine.
Cook until liquid is half way evaporated,
add the squash
stir until is very well
mix, last add dice tomatoes
1 tablespoon of
 left over tomatoes paste
salt and pepper to taste.
cook for 30 minutes.
Serve with any pasta
 you desire
or eat with bread.
