COCO PUMPKIN SOUP

Tired of eating the same type
of soup craving for something different
try my COCO PUMPKIN SOUP
do not let the name fool you
is has taste and is delicious
with a pop of ginger.

INGREDIENTS

1 15 ounce Can 100% Pure Pumpkin Puree
1/2 cup  and 3 Tablespoon of Coconut Milk
1/2 Cup of Vegetable Stock or Broth
1 Small Onion Dice
1 Garlic minced
1 Teaspoon of Ginger
1 Teaspoon of Sea Salt
1 Teaspoon Fresh Ground Pepper
5 Tablespoon Olive Oil
1 Teaspoon of Cumin

DIRECTIONS

Sauteed Onion and garlic in a 6 Tablespoon  until translucent 
add the ginger cook for 3 min
add 1 teaspoon Sea Salt, Fresh Ground Pepper and Cumin
add the Pumpkin Puree, Veggie Stock and Coconut milk
Stir until well combine simmer for 15 minutes
until it thicken. let it cool place in a food processor or blender
in batches blend until smooth.
Serve drizzle with the 3 tablespoon of coconut milk (optional)


100% Pumpkin Puree and Coconut Milk

Sauteed Onion and Garlic in Olive Oil

Add Ginger

Simmer

FINAL RESULT 
Drizzle 3 Tablespoon Coconut Milk



ENJOY

Pumpkin Soup



Option for Topping
Toasted Pumpkin Seed
Dollop of Sour Cream
Dollop of Greek Yogurt

  11. Yum! It looks so good. I love pumpkin soup. We make ours on January 1st to celebrate our independence day In Haiti. We add celery, potatoes, carrots, the Penne pasta, and lots of meat. Lol!

  14. This looks super yummy, Jackie! I love how simple and easy the recipe is too. Sorry to ask but is it possible for you to suggest a alternative to pumpkin puree? We're not a fan of pumpkin in this house but I do want to make this soup!

    1. Try it with yams but bake the yams than take out the filling than follow the instuction above also works with butternut squash.
