A TWIST ON WHITE RICE

If tired of eating plain white rice
here is a recipe.
A Twist On White Rice
is a simple delicious dish
you could serve with any
side like fish or meats
or eat by itself.
Is a perfect light dish
to eat during this warm season.

INGREDIENTS

3 -4 Cups of Cook Rice
1 lemon Zest
1 1/2 Cup of Lemon Juice (Fresh Lemon)
1 Teaspoon of Dry Parsley
1 Small Onion Dice
1 Garlic Clove minced
1/2 Cup of Vegetable broth
1 Teaspoon of Butter
1/2 Teaspoon of Salt
1/2 Teaspoon of Fresh Ground Pepper
1 lb of Asparagus Cut

INGREDIENTS FOR ROASTED POTATOES
1 Small Potatoes dice
1 Teaspoon of Olive Oil
1 Teaspoon of Salt and Fresh Ground Pepper
1 Teaspoon of Oregano
Preheat oven at 350 cook potatoes for 25 minutes
or until tender.

Directions For Potatoes

Cook rice in a rice cooker or use leftover rice.
In a Sauteed pan add butter dice onion, minced garlic 
cook until translucent.
Add the cut up asparagus cook until tender.
Add the white rice mix well.
Add the cook roasted potatoes stir in well.
Pour in the 1/4 cup of Vegetable Broth
stir until it evaporates.
Add the lemon juice
season with salt and pepper
and dry parsley.
Cook for additional 20 minutes.
Stir in the lemon zest and serve.

Place All Ingredients In A Sauteed Pan

Enjoy
