PESTO CHICKPEA HAM SOUP

On those raining days sometimes
we want to have a bowl of
soup that has taste and comforting to eat.

This is how this soup came about
It was raining I got drench!! really and all I was
craving was for soup that was hearty
but not with pasta or rice.
I wanted something different so I look
in my pantry and freezer.
I grab a can of Chickpeas bean
some leftover Ham from freezer
and a few spices including Pesto
that was already conveniently made.
This is how the soup came about.
PESTO CHICKPEA AND HAM SOUP



INGREDIENTS:
1 -16 oz Can Garbanzos aka Chickpeas (Drain and Rinse)
2 Tablespoon of Olive Oil
1 Medium Onion Dice
1 Garlic Clove Minced
1/2  Tablespoon of Pesto Sauce (Pop &Cook) 
2 Cups Leftover Ham cut into cubes 
( you could also use 1 ham hock)
3 Cups of Vegetable Broth
1/2  Tablespoon of Pesto
1 Teaspoon of  Dry Oregano
1 Teaspoon of Dry Parsley
1 Teaspoon Fresh Ground Pepper
1 Teaspoon of Sea Salt
1 Bay Leaf
1 cup of Fresh Spinach

DIRECTIONS:

In a large pot over medium heat add 2 Tablespoon of Olive Oil,
Sauteed until translucent onion and garlic, 
Add the pesto stir until it defrost,melt
 and incorporate with the onion and garlic
 now add the 2 cups of cubes ham stir,
Add the 1 can drain and rinse Chickpea beans, 
On top of beans add
1 teaspoon of each dry oregano and dry parsley
1 teaspoon of fresh ground pepper and Sea Salt
3 Cups of Vegetable Broth
1 Bay leaf
Stir well cover simmer on medium to low heat 
25-30 minutes
In the last 15 minutes
with a potatoes masher mash some of the bean
to make the broth thicker, 
Add the 1 cup of Spinach
Finish cooking for additional 15
Serve with your favorite bread.

Pesto Sauce (Pop & Cook)
Find in freezer section

 Stir Until Well Incorporated

 Add The Ham

Add 1 Teaspoon of Each
Dry Oregano, Dry Parsley, Fresh Ground Pepper and Sea Salt
and 3 Cups of Vegetable Broth

 Stir Well


 Add Bay Leaf

Mash Bean With A Potatoes Masher To Make Broth Thicker 


1 Cup of Fresh Spinach
Finish cooking for additional 15 minutes

Final Result

Enjoy
