PENNE WITH ARTICHOKES AND LEMON SAUCE


Artichokes could add a dimension of flavor
to your food even if they are marinated from a jar.
The marinated generally contains olive oils and herbs.
They are a great source of Vitamins A and C
but is also high in sodium,
so keep that in mind and eat in moderation.

The night I get home late but want a meal that satisfy
my palette without consuming my time in the kitchen.
I decided to come up with this recipe
adding all my favorite ingredients together.

PENNE WITH ARTICHOKE AND LEMON SAUCE
created with the intent to be satisfy and tasty
hope you like it.

INGREDIENTS
1 Box of Penne Dry Pasta Uncooked (I used Barilla)
1 Jar Marinated Artichoke
1 Teaspoon Chopped Garlic
5 Tablespoon of Olive Oil
1 Teaspoon of Unsalted Butter
1 Teaspoon of each Fresh Ground Pepper and Salt
1/2 Cup Cherry Tomatoes Cut In Halves
1/4 Cup White Wine ( Sauvignon or Chardonnay)
3 Tablespoon Dry Parsley or Hand Full of Fresh Chopped Fine
1 Tablespoon of Lemon Zest
1/4 Reserve Pasta Water

JAR ARTICHOKES

CHERRY TOMATOES


DIRECTION
Cook pasta till al'dente, 
In a saucepan add 5 Tablespoon of Olive Oil add
1 teaspoon of chopped garlic in medium heat sauteed
for 3 minutes add the 1/4 cup of wine let it reduce
add 1 teaspoon of each Fresh Ground Pepper and Salt
add 1 teaspoon of butter let it melt slightly add the 
Artichokes stir add the Cherry Tomatoes cook
until slightly tender and heated through
add the cook Penne Pasta 
and 3 Tablespoon of Chopped Parsley,
1 Tablespoon of Lemon Zest
add the reserve water stir well Simmer for 5 minutes
than finally add the Lemon Sauce (recipe below)
stir until is very well incorporated 
Serve

 ADDING ARTICHOKE
TO THE GARLIC< WINE >SALT
FRESH GROUND PEPPER>
UNSALTED BUTTE
R

ADD THE CHERRY TOMATOES CUT IN HALVES

 ADD THE PENNE PASTA 1 TABLESPOON OF LEMON ZEST 
3 TABLESPOON OF PARSLEY

ADD THE LEMON JUICE AND
MIX WELL 


LEMON SAUCE INGREDIENTS

1 1/2 Juice of Fresh Lemon
1/4 Cup Olive Oil
Pinch of Salt and Fresh Ground Pepper

DIRECTION

In a Jar or mixing bowl add the 
lemon juice, olive oil, Salt and Pepper
Whisk Well 

IT WILL LOOK LIKE THIS


GOOD TO KNOW
Lemon is a citrus that could be use in so many ways
beside it has a nice amount of Vitamin C it also
has potassium and a healthy doses of iron.
It restore your PH Balance.

I always have a bowl full of Lemons.
