ZUCCHINI BITE SIZE SANDWICH


These ZUCCHINI BITE SIZE SANDWICH
are perfect to eat on a hot summer day.
If you having a get together or just looking
for a easy meal not heavy but yet satisfying 
to the belly than ladies and gentleman you 
need to try this recipe.
Is versatile you could eat hot or at room temperature
either way you wont loose the flavor.
A delicious dish to cook tonight.

GOOD TO KNOW
This could also be serve as appetizer.

STEP 1

INGREDIENTS ZUCCHINI PATTIES
1 Zucchini Shredded
1/3 Cup and 3 Tablespoon of Flour
1 Egg
1 Small Onion Dice
1/8 tsp Pink Himalayan Salt
1/8 tsp Fresh Ground Pepper
Vegetable Oil or Avocado Oil for Frying

DIRECTIONS
Shred Zucchini in a food processor or grate place over
a colander sprinkle 1/8 Pink Himalayan Salt and Fresh Ground Pepper,

Allow zucchini to stand for 15 minutes

With a slotted spoon gently press down

to get excess of zucchini water.

Transfer to a mixing bowl

add 1/3 cup and 3 Tablespoon of flour

One Egg

Stir until is well incorporated

In a large saute pan add oil fully cover

Cook on medium to high heat
Place a paper towel on a plate
Scoop 1 Tablespoon of zucchini mixture
and press down
gently until it form a round shape
Place 4
 2 inches apart at a time to fry
Cook for 3-4 minutes on each side
or until golden brown.
Place on the paper towel line plate
and continue until done with
the Zucchini mixture.
Start to ensemble your sandwich






STEP 2

INGREDIENTS FOR VEGGIES
1 Roma Tomatoes 
1 Cucumber
1 Avocado 

DIRECTIONS
Slice all the vegetable
and place in the fridge
until ready to use.



STEP 3
INGREDIENTS FOR AVOCADO SPREAD
1 Avocado Hass
1 Tsp of Garlic Powder
1 Tsp of Paprika
Pinch of Salt and Pepper to taste
1 Tsp Fresh Squeeze Lime Juice

DIRECTIONS
Peeled and get rid of pitted 
Place avocado in a bowl
mash with a folk until semi creamy consistency
 adding
1 tsp of Garlic Powder and Paprika
Pinch of Salt and Pepper
1 Tsp Fresh Squeeze Lime Juice
Place in fridge ready to use


STEP 4

INGREDIENTS FOR CHICKPEAS SPREAD

Half of 14 oz can Chickpeas (garbanzo beans)
Pinch Salt and Pepper
1 Tsp Fresh Squeeze Lime Juice

DIRECTIONS
Drain and Rinse off half of can of Chickpeas
Place in a bowl Mash with folk until
Semi Crush Consistency
add 1 tsp Fresh Squeeze Lime Juice
Start to ensemble your 
Zucchini Bites Size Sandwich


GOOD TO KNOW
In case you wondering
what I do with the other 1/2 of chickpeas
I make a salad with same ingredients here
and I add shallots, sunflower seed for a little crunch,
Drizzle olive oil and lime juice, sprinkle with salt and pepper
It makes a great lunch or dinner the next day.


STEP 5
Ensemble Zucchini Bite Size Sandwich
Directions
Take a zucchini patties
spread with 
Chickpeas Spread
add a 
Slice of Cucumber

Take another zucchini patties
Spread with
Avocado Spread
add a 
Slice of Tomatoes

Keep rotating each spread
to come out with even
amount of chickpeas
and avocado,

Place on a plate
garnish with slice of avocado, tomatoes and cucumber
Enjoy.


FINAL RESULT
