VALENTINE'S DINNER IDEA

Valentine's Day 
Its a day to show your 
special someone what they mean to you.
This also count for your family.
So here are 
Valentine's Dinner Idea
All you have to do its pick up 
the ingredients and show
your culinary skills.

HERB CRUSTED BEEF 

Good To Know
Need to have the beef
marinated overnight

INGREDIENTS
1 eye of round beef (about 4 lbs)
3 medium shallots, finely chopped
1 tsp finely chopped rosemary
2 tsp plus 1 Tbsp vegetable oil
1 tsp kosher salt
1 Tbsp champagne or white wine vinegar
Arugula salad or any green to garnish on plate
(optional)

DIRECTION
Place beef on large sheet plastic wrap
Sprinkle all over with 1 tsp kosher salt
Patting to adhere wrap tightly
Refrigerate Overnight
Next Night Dinner
Preheat oven to 250 
remove plastic from beef
Pat beef dry 
Place on rack fitted into foil lined
rimmed baking sheet
Roast 2 hrs to 2 hrs 30 minutes or 
Until internal temperature reaches 130*F to 135*F
Meanwhile in 8 inch
Skillet on medium skillet
Cook shallot and rosemary
add 1/4 tsp salt in 2 tsp oil
5 minutes or until 
Shallots are golden stirring often
remove from heat add vinegar
Scraping up any browned bits 
Pour over meat when reading to serve
Side salad will follow


LEMON ARUGULA SALAD
Refreshing Salad great to serve with
Herb Crusted Beef or Fish

INGREDIENTS
1 lemon
1/2 tsp sugar
1 pkg 5 oz arugula
2 Tbsp extra virgin olive oil
2 oz parmesan cheese, shaved

DIRECTION
With a pairing knife, cut top and bottom off lemon
Then into small bowl cut segments from between membranes
Cut each segment in half.
Squeeze 1 Tbsp juice from pulp
Sprinkle sugar over lemon
segments let stand at least 10 minutes.
In large bowl toss arugula with oil, lemon segments,
juice, 1/4 tsp salt and 1/2 tsp coarsely ground black pepper.
Gently fold in parmesan 
To serve shave additional parmesan on top if desired
Serve Immediately.


ROMAN STYLE RICE AND HERB STUFFED TOMATOES

INGREDIENTS
1/2 cup brown rice
1 cup homemade chicken stock, or
low sodium chicken stock or water
4 beefsteak tomatoes
(approx 6-8 ounces each)
4 Tbsp extra virgin olive oil, divided
1/4 cup minced basil
1/4 cup minced mint
1/8 tsp unrefined sea salt
1/4 tsp freshly ground black pepper

DIRECTION
Preheat oven to 350 degree
Place rice and chicken stock or water in a saucepan
Bring to a boil.
Stir once, cover with lid
Reduce heat to simmer and coo 50 minutes.
Remove from heat, let stand in covered pot for 10 minutes
Fluff with folk.
Meanwhile, wipe off the tomatoes, discard the stem without damaging
the skin, and lay the tomatoes stem side down.
Cut a round slice from the side opposite to the stem
If you will be using it as a lid.
With a melon scoop, scrape out the flesh of the tomato,
being careful not to break the skin.
Reserve the pulp and the juice.
Chop the pulp and mix it with the juice
(You can use a food processor)
In a bowl, combine the pulp and juice
with the rice, 3 Tbsp olive oil, basil,
mint, salt and pepper.
Stuff hollow tomatoes with the rice mixture
Cover with the tomato lids optional
and arrange in greased baking dish,
Standing the stuffed tomatoes with the lid side up.
Drizzle with the remaining 1 Tbsp olive oil and bake
for 20-30 minutes or until the tomatoes
are cooked through
Garnish with parmesan shave (Optional)
Serve hot or at room temperature.

BUTTER LEMON HERB SOCKEYE SALMON

INGREDIENTS
.65 lb Sockeye Salmon
1 Lemon Slice and Juice
1/4 tsp parsley, chopped
1 garlic clove dice
5 Tbsp butter
1/4 tsp kosher salt
1/4 tsp fresh ground pepper

DIRECTION
preheat oven 325 degree
In a foil line sheet
add the salmon
Sprinkle with kosher salt
and fresh ground pepper
Slice one half of the lemon
the other half juice
Microwave butter until melted 15 to 20 second (vary)
Place the half of lemon juice
into the melted butter and add the
1/4 tsp chopped parsley and chopped garlic
Pour over the salmon add the slice lemon
cook for 25-30 minutes keep a close eye
Serve

TIP
HOW TO PEEL AND CHOP GARLIC

1- Place a head of garlic on work surface of cutting board.
2- Separate cloves
3- Place a clove on cutting board and place chef's knife
on top of clove, firmly press on chef's knife
and crush the clove or garlic
4- Remove papery skin
5- chop with chef's knife to desired size
