RIGATONI WITH BOLOGNASE SAUCE


This its such a perfect comfort food
could be serve anytime of the week
it also freezes very well.
RIGATONI WITH BOLOGNASE SAUCE

INGREDIENTS
1 lb of Ground Italian Sausage
1 lb of Ground Pork
2 Carrots Chopped
1 Medium Onion Chopped
2 Garlic Cloves Chopped
1 Cup Dry Red Wine ( I use Merlot)
1 Can 28 Oz Crushed Tomatoes
1 Bay leaf
1/4 Tsp Red Crushed Pepper
1 Teaspoon Oregano
1 Tablespoon Tomato Paste
2 Tablespoon Olive Oil
1 Teaspoon of Each Salt and Pepper

DIRECTIONS
In a large pot cook sausage in 1 tablespoon if olive oil
breaking apart the meat as it cooks with a slotted spoon.
cook for 4 minutes the sausage to a bowl
Season ground pork salt and pepper
Follow the same above procedure for the ground pork.
and Transfer ground pork to a bowl.

In a food processor add the 2 carrots, 1 medium onion, 2 garlic cloves pulse
until completely chopped.
Place the chopped vegetables in the same pot you cook the sausage and pork
Cook for 3 minutes stirring add 1 tsp red crushed pepper add the 1 cup of dry red wine
cook for additional 2 minutes add the cook sausage and
pork incorporate well add the 1 tablespoon 
tomato paste and 1 tsp oregano, add 1 can crushed sauce and 
1 bay leaf season with salt and pepper to taste.

Let it simmer for 5 to 10 minutes
and serve with your favorite pasta
I use 1 pound Mezzi Rigatoni
