APPLE DELICIOUS BUTTERNUT SQUASH SOUP

This creamy tangy sweet apples is comfort in one bowl,
will make your palette sing.

APPLE DELICIOUS BUTTERNUT SQUASH SOUP

This its what you going to need

INGREDIENTS
2 pounds Butternut Squash, peeled, seeded and dice
2 Carrots, peeled and slice
4-5 Red Delicious Apple , peeled and slice
1 medium Onion dice
1 Teaspoon Fresh Grated Nutmeg
1 Teaspoon Salt and Fresh Ground Pepper
4-5 Cups of Vegetable Broth
1 Tablespoon Olive Oil
1 Sage Leaf to garnish (optional)

TOOL

Blender
or
Food Processor

DIRECTIONS
Dice and Slice Vegetable place in a bowl
add 1 salt and pepper
Meanwhile in a large sauce pan add 1 Tablespoon of olive oil
add dice medium onion sauteed until translucent about 3 minutes
add butternut, carrots and apples cook for 5 minutes stirring occasionally
add the 4 cups of Vegetable bring to a boil reduce
 and to a simmer add 1 teaspoon grated nutmeg
 cook until vegetables are soft 25 minutes.

Puree in batches two ladle at a time in a food processor or blender
blend until smooth (or any consistency you prefer)
return to large sauce pan heat for 5 minutes
Serve garnish with sage leaf
Enjoy.
