ROASTED BUTTERNUT TURMERIC SOUP

A lighter version to enjoy Butternut Squash
Soup, by roasting the squash it brings out
the sweet flavor that you will love no need
to add salt and pepper Yes, you read it right. 
NO Salt and Pepper

ROASTED BUTTERNUT TURMERIC SOUP

INGREDIENTS

1 Butternut Squash (2 lbs)
1 Tablespoon Butter
1 Teaspoon Turmeric
1 Teaspoon Nutmeg
1 Tablespoon Greek  Plain Yogurt
1 Tablespoon Olive Oil
1 1/4 Cup of Vegetable Broth

DIRECTIONS

Preheat oven at 400 degrees

Cut Butternut Squash in halves
drizzle with 1 Tablespoon Olive Oil
Place Butternut Squash face down on
a cookie sheet

Bake for 40-45 minutes
or until you could pierce with folk.

Remove and let it cool down enough to handle.

Scoop out the seeds and fiber discard
Scoop out the flesh place into a pot
Add 1 Tablespoon Greek Plain Yogurt
1 Tablespoon Butter
1 1/4 Cup Vegetable Broth
Mash with a masher or immerse a hand blender
mash or blend until smooth
add 1 teaspoon Nutmeg
and 1 teaspoon Turmeric
Simmer for 10 minutes
or until is hot enough to enjoy.

Garnish with what you like
I garnish with a fried prosciutto
and sprinkle with parsley

add Yogurt, Butter, Vegetable Broth
Mash or Hand Blend until smooth

Add 1 Teaspoon Nutmeg and 1 Teaspoon Turmeric
