CHICKEN MARSALA RECIPE


One of my weakness I may say
is
CHICKEN MARSALA
I absolutely love the combination
of this recipes creamy, tender chicken
with the sweet taste of the wine.

INGREDIENTS

4-5 Boneless Chicken Breast
2 Cups of All Purpose Flour
1 Teaspoon Salt and Pepper
3 Tablespoon Olive Oil
3 Tablespoon of Butter
2 Cup of Baby Bella Mushroom Slice
1/2 Cup Marsala Wine 
1/2 Cup Chicken Broth
1 Tablespoon Mascarpone
1 Teaspoon of Dry Thyme
1 Shallot Dice
1/4 Cup Black Olives

DIRECTIONS
In a Ziploc add the 2 cups of flour
1 Teaspoon of salt and pepper
add the chicken breast coat well
Set aside
In a sauteed pan add the 3 Tablespoon of olive oil
and 3 Tablespoons of Butter
Heat on medium to high
place chicken one of a time.
Cook for 5 minutes on each side
or until golden brown 
Remove add Mushrooms cook for 3 minutes
and add shallots cook for 2 minutes
Pour 1/2 Cup Marsala wine cook for 5 Minutes
Pour the 1/2 Cup Chicken Broth and the 1 Tablespoon
of Mascarpone Cheese
Heat until Mascarpone cheese is melted
Add 1 Teaspoon Dry Thyme
Place the chicken back to the pan
and Black Olives
Cook for 10 minutes or until the sauce is a
creamy consistence and chicken is completely
coated.


GOOD TO KNOW

Mascarpone cheese took the place for
whipping cream. A twist on this recipe.



This recipe 
it starts with good 
bottle of Marsala Wine
I recommend this one
Sheffield Marsala Wine
is bold and sweet

Dice Shallots

1 Teaspoon Dry Thyme

1 Teaspoon Fresh Ground Pepper/Salt

2 Cups of Slice Baby Bella Mushrooms

3 Tablespoons of each Olive Oil and Butter

3-4 Boneless Chicken Breast
2 Cups of Flour
Coated Chicken

Cook till Golden Brown
Sauteed Mushrooms

Sauteed Shallots 
Until it look like this

MASCARPONE

Pour 2 Cups of Marsala Wine
Chicken Broth and 1 Tablespoon 
Mascarpone Cheese 

Add the 1 Teaspoon of Dry Thyme
and 1/4 Cup of Black Olives

Serve with your favorite Vegetable
I serve with Asparagus top
with crispy pancetta 

Basmati Rice
This one is my favorite

CREAMY RISOTTO

To make creamy risotto it
takes patient but the results
are delicious.
This is a meal to serve
on a Sunday when you want to impress
and show off your culinary skills. 
To get the right consistency you need to practice,
before you know it you a pro.
Practice makes perfect.

CREAMY RISOTTO 

The rice that is common to use
is Arborio it makes for a good risotto
There is several other rice but I prefer
Arborio.

TIPS
Have all ingredients ready
Meaning
Measure, Chop
all ready to start your risotto
keep your broth warm very important.

TOOLS
Ladle
Saucepan
10 inch Saute pan or Dutch Oven


INGREDIENTS
2 Cups Arborio Rice
1/2 Cup Dry White Wine
8 Cups Vegetable Broth (Low Sodium)
2 Tablespoon Unsalted Butter
1 Shallot Chopped
1 Cup Finely Grated Parmesan Cheese


DIRECTIONS
In a Dutch Oven or 10 Inch Sauteed pan
Melt 1 Tablespoon of Butter
add the shallot cook until translucent. (3-4 minutes)
Pour the 2 Cups Arborio rice over shallots
add the additional 1 tablespoon of butter
coat rice with melted butter continue stirring
until rice edges have turn translucent and center opaque
about 3 minutes
Important avoid browning or burning the rice.
add the 1/2 cup of wine stirring completely
let it cook for additional 3 minutes
Now slowly add the Vegetable Broth in increments
1/2 cup at a time stirring regularly between additions wait
until is absorb to add another 1/2 cup of the broth
each cup is helping the rice to release is own starch
use a spatula through the rice it should leave a dry path where
the spatula was.
Do not rush
Continue using the broth begin tasting after 15 minutes
To see how far is cook.
It should take 25 to 30 minutes total
you might use all broth or left a drop
You will know is done when you notice
white hard white piece and the edges is soft.
In your final step add 1 tablespoon of butter
and the 1/2 of cup of Parmesan Cheese.

SERVE and ENJOY

NAAN MINI DIPPERS AND WAYS TO SERVE IT

diary aisle of the Supermarket.

These are perfect to come up with so many
bite size recipe you could serve
anytime and for any occasion
you like to celebrate.

Here Are Suggestion In How To Serve
NAAN MINI DIPPERS

MINI PIZZA

You get 7.05 oz Naan Dippers

Drizzle With Olive Oil

Bite Size Mozzarella Ball and
Cherry Tomatoes

PIZZA SAUCE

Drizzle with One Tablespoon of Olive Oil
Add A Teaspoon to Each Mini Dipper
of Pizza Sauce
Add One Tablespoon of Shredded Mozzarella
or 
One to two Mozzarella Bite Size Ball
Add Cherry Tomato cut in halve (optional
Bake in 350 Oven for 5 to minutes
or until cheese melt
